Oh my gracious people... I have got a TREAT for you today!! So this past weekend as I was indulging in an hour-long Pinterest marathon (don't you love those??), I ran across a recipe for this crisp. May I just say that I love apple crisps?? I love them especially in the fall when apples are in season. Anyway, that's not the best thing about this crisp. The best thing - I thought - was that the crisp could be made in just five minutes. I read through the recipe and thought, "Ha. That's funny. Impossible." But it looked so good! I read through the recipe again to learn that I already had all of the ingredients in my pantry plus a few more I wanted to add, so I thought I would give it a try...

People... THIS IS REAL! And so good!! It tastes just like an apple crisp that has baked for an hour in the oven. Just like it! The apples cook down and are really flavorful and tender. The crust is crusty, and buttery, and sweet. And speaking of "buttery," that flavor in this crisp comes from coconut oil - not butter, which is what crisp recipes usually include. The recipe is also made with whole wheat flour instead of regular flour. So with the coconut oil, whole wheat flour, the apples, oats, and the small serving size, I think this is semi-healthy - well minus the caramel I decided to drizzle over the top, but I couldn't help myself... :) But honey would be a great substitute. Once I got all of the ingredients organized, it really did take all of five minutes to assemble and cook it. The only caveat is that you really need let them sit for about five minutes to cool after they come out of the microwave. It is piping hot! It can be eaten right out the ramekin, spooned over the top of ice cream, or eaten for breakfast the next day (just cover and let it sit out on the counter overnight). It's just so, so, so easy to make and good...

Here is what you need and what to do (makes 2 single servings):
Adapted from Lindsay of A Pinch of Yum (I could hug her neck right now... )

3 tablespoons coconut oil, melted
1/4 cup old-fashioned oats
2 tablespoons chopped pecans
2 1/2 tablespoons whole wheat flour (divided)
2 1/2 tablespoons brown sugar (divided)
1/2 teaspoon cinnamon (divided)
1 teaspoon fresh lemon juice
1/8 teaspoon salt
2-3 cups chopped apples
2 tablespoons dried cranberries
Caramel for drizzling (I used a store-bought caramel), or honey for a healthier option

1. In a small bowl, add the coconut oil, oats, pecans, 2 tablespoons of the whole wheat flour, 2 tablespoons brown sugar, 1/4 teaspoon cinnamon, and the salt. Stir until combined.

2. In another bowl, add the apples, cranberries, 1/2 tablespoon whole wheat flour, 1/2 tablespoon brown sugar, lemon juice, and 1/4 teaspoon cinnamon. Toss to combine.

3. Add a small spoonful of the oat mixture to the bottom of 9 oz ramekins. Add about a cup of the apples to each ramekin. Really pack them in because they will cook down. Top the apples with the remaining oat mixture.

4. Heat the crisp in the microwave for 3 minutes and 30 seconds. The filling should be bubbling when its ready. It will be really hot when its done, so let it cool for 5 minutes or so before eating it! Drizzle the hot caramel or honey over the tops of the crisps. Enjoy!
